		<description>I really have to buy one Perlini system [though the commercial version].

I think that Perlini is quite unique - it is not a &quot;normal&quot; carbonation device. It is not so good, of making home made sodas and so on. 

However it is magnificent, to mix and carbonizing cocktails, in one step - other systems cannot do this at all. In future I guess, you would need both systems, Perlini to instantly carbonize drinks - and a more traditional system like Twist n Sparkle, Fizz Giz [I would fav this], a cream/soda siphon [though using CO2] or a soda stream [which is the worst option, as you shall only use water, to carbonate].

By the way, the need for more sugar is quite obvious, CO2 is dissolving in water into an acid - hence the drink will be more acidic, which can be counterbalanced with sugar.</description>

		<description>Most of the time, you get to explain what you&#039;re doing and why. That was the case for that comp, but I have done others where the drinks are judged blind or where there&#039;s been an MC rather than me just rambling on for a goodly while.

They should pretty much have always have the ingredients at Sygn, but I can&#039;t guarantee all the guys will know the recipe. I guess someone should post it online or something.

Hope Glasgow&#039;s looking after you, let me know next time you&#039;re heading through to the East Coast.
